Overnight Breakfast Casserole Recipe:


30 oz shredded hash browns (pre-packaged or personally shredded, you’re call)

1/2 lb ground sausage

1 lb bacon

2 cups cheddar cheese (shredded)

1 cup mozzarella cheese (shredded)

1 green pepper

1 red pepper

1 onion

12 eggs

1/2 cup milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon sugar

1 stick butter



  1. Brown the ground sausage and drain the grease.
  2. Dice the green pepper, red pepper and onion.
  3. In a bowl, whisk together the eggs, milk, salt, black pepper and sugar.
  4. Cook the bacon and chop it.
  5. Grease the bottom of the crockpot with the butter and leave the stick at the base.
  6. Line the bottom of the casserole in the crockpot with half the shredded hash browns.
  7. Layer with bacon, sausage, green pepper, red pepper, onion, mozzarella cheese and cheddar cheese.
  8. Use remaining hash browns to make top layer.
  9. Pour egg and milk mixture over the top.
  10. Cook on low for 6-8 hours.


Kick it Up a Notch: Don’t be scared to add whatever you like to this casserole, be it jalapeños, mushrooms or some cherry tomatoes, you really can’t go wrong. Want to mix in banana slices? Sure. Want to add hot sauce? Go right ahead. Want to serve it on a tortilla shell? I don’t see a problem with that. Just leave the maggots to your weird friends and that shirtless saxophone player.
