BCP Pairing Sessions: #21: Fall Edition – Warm Spice on a Chili Night

Beverage: Saison

Cigar: Mild Burns

Eats: Southwest Style Slow Cooker Chili

Why It Works: There are few foods that people stake their reputations on as much as chili, and if you’re serving this Slow Cooker Southwest Style Chili, you won’t be embarrassed. That being said, let the food be the beast in this pairing and keep the cigar mild and the beer with just enough hops to put a dent in your palate.

1 lbs ground beef

1 garlic clove (diced)

1 can black beans

1 can green chili

1 can kidney beans

1 can corn

1 green pepper (chopped)

1 onion (diced)

3 jars mild salsa (10 oz)

1/4 cup chili powder

1 tablespoon cumin

black pepper (to taste)

salt (to taste)

cheddar cheese (shredded/grated)

Instructions:

  1. Add everything but the cheddar cheese to the crock pot and stir to mix.
  2. Cook for 8-10 hours on low. Add black pepper or salt to taste.
  3. Serve with a handful of shredded cheddar cheese on top.

Kick it Up a Notch: While you’re waiting on this delicious chili to cook, slice a few potatoes into steak fries, drizzle some olive oil on them with a dash of salt and pepper and throw them in the oven at 375 degrees when you have about an hour to go before the chili is done. Cover them with some cheddar cheese and you’re only a minute away got chili fries staring you in the face.
